the (almost) perfect pink cupcake


So I made these cupcakes. They were going to be the quintessential cupcake: a moist, golden buttery cake with a fluffy hurt your teeth sweet pink buttercream. The cake part was an absolute success. It was as yummy and buttery as one of those Duncan Hines boxed butter cakes that I grew up on with none of the chemical aftertaste. The success of the buttercream depends on where you come down on the dessert debate. For those who claim they don't have too much of a sweet tooth, this buttercream was perfect. It was light, voluminous, and on the lighter side of the sweet meter. But, for those of us, myself definitely included, who like desserts to have a knock-your-socks off sweetness, this was not it. My sweet tooth and I have come to realize that we need to find a buttercream that pretty much mimics the dense, overly sweet, vegetable shortening buttercreams that can be found on grocery store sheetcakes. If anyone has any recipes they care to share, let me know!

    The cupcakes are adorable. I've been searching & testing many recipes for that perfect butter cake recipe that includes all the WONDERFUL things from those cake mixes we all grew up on..except from scratch..so all the better right? lol I do have a buttercream recipe that sounds like EXACTLY what you're looking for..so if you decide to give it a try stop by my blog & let me know what u think. It's as follows..

    Buttercream Icing:
    1 cup vegetable shortening (not butter flavored)
    1 tsp vanilla
    4 cups (sifted) powdered sugar (1lb.)
    2 Tbsp milk or water

    Cream shortening, & all liquid ingredients together. Add sugar 1 cup at a time, beating well on medium. Beat until fluffy. If icing is too thick add more milk/water 1 teaspoon at a time beat again on medium to incorporate.

    I use this on all my cakes & have repeatedly been told my icing tastes like the grocery store icing..lol Hope you enjoy!! btw where did u find the cake recipe u used?? I'd luv to try it =)

    awww thank u so much for posting the cupcake recipe. I can't wait to try it!! I'm frantically in search of a GREAT, moist chocolate & yellow/butter cake recipe that I can use for all my birthday & special occassion decorated cakes.

    I just completed all of the Wilton decorating classes & it was SO much fun!! I wanted to do it for a long time & it took me a while to get up the courage..but I'm so glad I finally did. I learned alot & it gave me that extra help I needed to finally decide to start my own homebased bakery, which I've started to do now. Let me know how the buttercream recipe works for you. Oh & I'm gonna add your link to my blog..hope that's ok with u?? =)

    I found a recipe for buttercream that tastes like grocery store sheetcake frosting. Here's a link to it on my blog. Just make sure you use a gel food coloring as the water based ones don't work well with it.
